STEP 1
How to stew squid in sour cream and onions in a frying pan? To begin, prepare the necessary ingredients according to the list. You can use sour cream of any fat content, I used 15%. In addition to the indicated spices, you can add your own herbs and spices to taste.
STEP 2
You can use squids already peeled, without skin or with skin. If you use unpeeled squid, you must first remove the skin, remove the entrails and the chitinous plate. To make the squid easier to clean, you can place the carcasses in boiling water for 30 seconds. Cut the prepared squid carcasses into rings. Cut the tail fins into strips.
STEP 3
Cut the onion into half rings or cubes, as you prefer. In addition to the onion, you can also chop 1 clove of garlic.
STEP 4
Wash the dill, dry and finely chop. In addition to dill, you can use other herbs to taste.
STEP 5
Heat vegetable oil and butter in a frying pan. Add the onion and fry, stirring, until soft and light golden brown, about 3 minutes. Then you can go in two ways: 1. Add 1 tbsp to the onion in the frying pan. l. without a heap of flour and fry, stirring, for another 1 minute, and then pour in sour cream. But in this case, the appearance of lumps is possible. Therefore, I prepare sour cream sauce differently.
STEP 6
To prevent the sour cream from curdling when stewing, I advise you to dilute 1 tbsp in it in advance. l. corn starch.
STEP 7
Pour sour cream and starch into the pan with the onions. Salt, pepper and mix everything. Reduce heat to low and simmer, stirring, for a couple of minutes. If necessary, dilute the sauce with milk, sour cream or water, bringing the sauce to the desired consistency.
STEP 8
Place the squid in the pan and simmer all together for no longer than 3 minutes, otherwise the squid will become tough as rubber and completely tasteless.
STEP 9
Sprinkle everything with chopped dill and stir.
STEP 10
Immediately remove the pan from the heat, cover with a lid and let the squid brew for about 20 minutes. These squids can be served as a separate appetizer or main course with any side dish. Bon appetit!
