STEP 1

STEP 2

The weight of zucchini is taken into account without peel and seeds. Therefore, first wash and peel the zucchini, and then weigh it. Then the taste will be the most balanced, exactly as it should be. If the zucchini is young and the seeds are small and tender, you don’t have to remove them, it depends on the quality of the vegetables.

Do not invert the jars onto their lids; the caviar will stain them and the shelf life may be shortened. Store prepared squash caviar with mayonnaise in a cool place.
STEP 11
