Spinach puree soup with cream

    How to cook delicious creamy spinach soup? Very simple. First, prepare the necessary ingredients according to the list. You can use fresh, frozen or canned spinach. I used frozen spinach. You can change the ratio of spinach and potatoes to your taste. Cream will suit any fat content. I have 20%. But keep in mind that depending on the cream, the calorie content of the finished dish will change.

    If you use frozen spinach, you do not need to specifically defrost it. If the spinach is fresh, rinse it thoroughly and dry it. You can remove the cuttings, leaving only the leaves.

    Peel the potatoes and cut into small cubes.

    Peel the onion and cut into small cubes.

    Wash the dill, dry and finely chop.

    Melt the butter in a heavy-bottomed saucepan over medium heat. Add the onion and fry in butter until golden brown.

    Add spinach and chopped dill. Season the soup with salt and pepper, add dry garlic, salt and pepper. Cover the pan with a lid, bring to a boil and cook everything together for 5-7 minutes.

    Return the soup to low heat. Pour in the cream. Stirring, bring the soup to a boil and immediately remove from heat. You can adjust the thickness of the soup to taste by adding more or less cream.

This is not the first time I have made this soup. This time I prepared my spinach puree soup with cream without fresh dill (without it, the soup lost its light characteristic dill flavor and bright emerald hue). I took the spinach frozen in sheets, powdered garlic on the tip of a knife, I didn’t measure the liquid ingredients exactly, I added it “by eye”, I used 10% cream. When preparing, I followed the technology described in the recipe. I am delighted with this soup! He's one of my favorites. And my children really like it too. Good recipe, I recommend it!
