Spicy eggplant appetizer with tomatoes

STEP 1

We prepare the necessary products for preparing a delicious spicy appetizer of eggplants with tomatoes and cut the young eggplant into rings and half rings.
STEP 2

Place the chopped eggplants in a bowl and add salt to taste and set aside.
STEP 3

We prepare the dressing for our appetizer and cut two cloves of garlic into small strips.
STEP 4

Chop some hot chili peppers very finely.
STEP 5

Place the chopped garlic and pepper in a bowl, add one tablespoon of apple cider vinegar, one tablespoon of vegetable oil and stir well to obtain the desired dressing for the future snack.
STEP 6

Chop some parsley.
STEP 7

Lightly squeeze the eggplants and drain the excess liquid, place them evenly in a frying pan with vegetable oil, which we first heat well on the stove. Fry the eggplants for about four minutes on each side until golden brown.
STEP 8

Place the fried eggplants on a plate, add the previously prepared dressing and stir gently, then put the plate in the refrigerator for two hours.
STEP 9

After some time, we take the plate with eggplants out of the refrigerator and add the tomato cut into slices to the dish, sprinkle parsley on top. I wish everyone a bon appetit!
