Souvlaki with figs
An original Greek dish - try it. Souvlaki is a kind of Greek kebabs. Unlike Caucasian ones, they are fried not on long skewers, but on short skewers. If you have wooden skewers, do not forget to put them in cold water for 30 minutes beforehand. Firstly, after soaking they will not burn, and secondly, pieces of food will not stick to them.

Step-by-step preparation
Cooking time: 40 mins
STEP 1
Using a small sharp knife, cut off the tops and tails of the figs. Scoop out some of the pulp from the middle.
STEP 2
Cut the feta into 18 equal cubes. Place one cube into each berry. Buy the lightest salted feta you can find for this dish. If that doesn’t work, replace it with soft, mild cheese.
STEP 3
Cut the bacon strips in half. Place a sage leaf on each, and stuffed figs on top.
STEP 4
Wrap the berries in bacon and thread onto wooden skewers soaked in cold water. Heat olive oil in a frying pan and fry the souvlaki for 2 minutes. on each side. Serve as a hot appetizer with dry white or red wine.
