    Pour water into the pan, add washed or soaked beans and cook until tender.

    If you plan to prepare such a soup in advance, for faster preparation, soak the beans in water overnight so that they swell and become softer.

    Rinse the dill or any other fresh herbs you prefer under running water. Finely chop with a knife.

    Take red carrots, peel and grate on a coarse grater.

    Wash the mushrooms well and cut into not very small pieces. Any mushrooms will do. Even forest ones. From the forest, the soup will be even more aromatic. I used oyster mushrooms.

    Pour a small amount of vegetable oil into the frying pan, enough to fry onions, carrots and mushrooms. Fry finely chopped onion and grated carrots until transparent. Add the mushrooms and fry everything together over low heat for 4 minutes, stirring constantly.

    Then add tomato paste to the pan with the mushrooms (the paste can be diluted with hot water). Mix everything well and let it simmer for a couple of minutes.

    Peel the potatoes and cut into pieces as for regular soup. Throw the potatoes and mushrooms fried with vegetables into the pan with the prepared beans. Add salt and pepper to taste, add herbs. Cook until the potatoes are completely cooked.

Quite by accident I came across this recipe for soup with mushrooms and beans, and at home I had all the necessary products - red beans and oyster mushrooms. I pre-soaked the beans, then threw them into boiling water and boiled them for about an hour, while the water turned dark and the beans themselves became lighter in appearance. I did not drain this dark water; I continued to cook the soup in it, adding potatoes and frying. The soup turned out to be filling and very interesting in taste. Oyster mushrooms add special freshness. At the same time, in appearance it is very similar to borscht. I myself would not have thought of combining the ingredients like this, in fact I planned to prepare completely different dishes from them, thanks to the recipe)))
