Soup with meatballs and vermicelli

Step-by-step preparation
STEP 1
How to cook soup with meatballs and noodles? Prepare everything you need. Peel the potatoes, onions and carrots. Rinse the peeled vegetables to remove any dirt. You can use any meat to make meatballs. I will cook using pork.
STEP 2
Cut the pork into pieces and pass through a meat grinder. Follow the meat with half the onion. Place the minced meat in a spacious bowl, add the egg, salt and a little spice. Mix everything well so that the ingredients are evenly distributed among themselves.
STEP 3
Pour water for the soup into a saucepan of a suitable size and place it on the fire. You can use a non-stick or enamel pan. Bring the water to a boil. Using your hands, form the minced meat into small meatballs and place them in boiling water. Why in boiling water? It is in boiling water that the meatballs “set” on the outside and will not fall apart during further cooking. Bring everything together again to a boil. The foam that forms during boiling must be skimmed off.
STEP 4
Cut the peeled potatoes into small pieces and place them in the pan with the meatballs. Cook everything together for 15-20 minutes.
STEP 5
Finely chop half of the remaining onion. Grate the carrots on a medium grater.
STEP 6
Pour a little vegetable oil into a hot frying pan and add chopped onions and carrots. Fry everything together for 3-4 minutes over medium heat. Don’t forget to stir the frying so that the vegetables don’t burn. Place the finished frying into the pan with the soup.
STEP 7
At the end of cooking, add the prepared vermicelli to the boiling soup. Boil it for 3-4 minutes. Add some salt and spices.
STEP 8
If desired, you can add some chopped herbs. I really like adding fresh dill to soups. Remove the pan from the heat and let the soup sit for a while under the lid. 10 minutes will be enough.
STEP 9
Pour the finished soup into prepared plates and serve. You can add a little sour cream. Bon appetit!
