  1. STEP 1

    STEP 1

How to cook soup with meatballs and rice? Prepare the necessary ingredients. You can use any minced meat: pork, beef, mixed, chicken. Rice too, I have long white rice. Wash the vegetables thoroughly and dry. Wash the egg too.

  2. STEP 2

    STEP 2

Transfer the minced meat to a suitable bowl. Add egg, salt and spices to it.

  3. STEP 3

    STEP 3

Mix the minced meat well with a spoon or your hands.

  4. STEP 4

    STEP 4

Pinch off pieces from the minced meat and form small round meatballs. To prevent the meat from sticking to your hands, moisten them with water.

  5. STEP 5

    STEP 5

Peel the washed vegetables. Cut the potatoes into cubes. Grate the carrots on a coarse grater.

  6. STEP 6

    STEP 6

In a thick-bottomed saucepan, fry the carrots and potatoes in vegetable oil for about 5 minutes, stirring them with a spoon or spatula.

  7. STEP 7

    STEP 7

Rinse the rice well in five waters. Then add the rice along with the bay leaf to the roasting vegetables. Continue stir-frying for 1 more minute.

  8. STEP 8

    STEP 8

Pour 2 liters of hot water into the pan and stir.

  9. STEP 9

    STEP 9

Cook the contents of the pan for about 5 minutes over medium to medium-low heat.

  10. STEP 10

    STEP 10

Place the meatballs into the boiling water one at a time. Be careful not to get burned by splashing hot water.

  11. STEP 11

    STEP 11

Cook the soup over medium heat for 15 minutes, periodically removing the foam and stirring from bottom to top. The finished meatballs should float to the top. Taste the soup and, if necessary, add salt and pepper to taste.

  12. STEP 12

    STEP 12

Let the soup simmer, covered, for about 10 minutes and pour into bowls, sprinkle with chopped herbs.

Instead of rice, you can use vermicelli.

For lunch I made a delicious soup with meatballs and rice. I liked that this soup is quick to prepare, and my daughter liked that it does not contain onions). I grated the carrots on a medium grater to make them more tender. And cut the potatoes into small cubes. Thanks to frying the carrots in vegetable oil, the broth turned out bright orange. I made the meatballs from minced chicken breast. Some of the rice was added to the minced meat for softness. This simple and light soup turned out very tasty, beautiful and even filling! Thanks for the recipe!

The soup turned out very tasty. And in thickness, and in appearance, and in products. I didn’t change anything in the recipe, I did everything according to the instructions. I just didn’t sprinkle it with herbs, my child doesn’t eat it (and he weaned me off it). My report!

10 out of 10, I prepared the soup in 40 minutes, it’s very tasty, and the main thing is to cook it quickly) I’m adding it to my favorites, good luck to the author!

Thanks for the recipe! I made this with a few minor modifications and no rice. I don't like mixing cereals with potatoes. Everything worked out!
