  1. STEP 1

    STEP 1

To prepare pizza-flavored soup, we will need approximately the same set of products as for baking, only instead of dough we will use broth. It is better to take raw smoked bacon - it is more aromatic and its taste is more pronounced, and for our soup this is important. You can use chicken or beef broth. Chicken is more neutral, while beef has a stronger flavor. I used beef broth. You can replace the broth with clean water.

  2. STEP 2

    STEP 2

Wash the vegetables and dry them. Cut the zucchini into thin semicircles.

  3. STEP 3

    STEP 3

Peel the bell pepper from seeds and stems and cut into strips. Pepper can be any color. I used green to give the soup a contrast.

  4. STEP 4

    STEP 4

Cut the bacon into strips. I already had bacon cut up, but the slices were too long, so I cut them in half.

  5. STEP 5

    STEP 5

Cut large mushrooms into slices, medium ones into halves or quarters, small ones can be left whole.

  6. STEP 6

    STEP 6

Peel the onion. You can add the onion whole to the soup and then remove it at the end of cooking, like I did, or finely chop and fry along with the rest of the vegetables (step 12).

  7. STEP 7

    STEP 7

Grate the cheese on a coarse grater.

  8. STEP 8

    STEP 8

You can add whole cherry tomatoes to the soup or cut them in half.

  9. STEP 9

    STEP 9

Cut the tomatoes in half and grate on a fine grater. As a result, you will end up with a puree like this, and the skin will cut off by itself. You can use ready-made chopped tomatoes in their own juice.

  10. STEP 10

    STEP 10

Add ketchup and sugar to the tomato mixture and stir.

  11. STEP 11

    STEP 11

Heat the pan over high heat. Add the bacon strips and fry until crispy. In general, the bacon can be fried in a separate pan, but if you have a suitable heavy-bottomed saucepan, you can cook the soup in it from start to finish.

  12. STEP 12

    STEP 12

Transfer the bacon to a plate, trying to keep all the fat from it in the pan. This fat will be needed for frying vegetables.

  13. STEP 13

    STEP 13

Add zucchini, mushrooms, bell peppers and whole or chopped onion to the pan. Fry, stirring, over high heat for about 7 minutes. At the end, lightly salt everything.

  14. STEP 14

    STEP 14

Pour a glass of broth (or water) into the vegetables.

  15. STEP 15

    STEP 15

Cover the pan with a lid and simmer everything together for 5 minutes over medium heat.

  16. STEP 16

    STEP 16

Add cherry tomatoes to the pan. Pour in the remaining broth or water and add the tomato mixture. Mix everything well. Bring to a boil and cook the soup for another 10-15 minutes until the vegetables are ready, periodically skimming off the foam.

  17. STEP 17

    STEP 17

Add the cooked bacon to the pan, reserving a few slices for serving, and stir to coat.

  18. STEP 18

    STEP 18

Then turn off the heat, cover the pan and let the soup sit for 10 minutes.

  19. STEP 19

    STEP 19

Ladle the soup into bowls. Add the remaining fried bacon and grated cheese to each and serve. Bon appetit!
