I really wanted to bake a simple cupcake with raisins using kefir. I made the dough according to the recipe, except that the remaining potato and corn starch together amounted to only 10 g, so I replaced the remaining 40 with regular flour. I didn’t use a mixer, I mixed everything with a whisk and I wouldn’t say it was fluffy. I didn’t wash the raisins, didn’t dry them, didn’t roll them in flour (I have good, proven light raisins), so I added all the flour that the recipe calls for to the dough. I didn't have a special cake pan. I wrapped a can of green peas in baking parchment and placed it in the center of a mold with a diameter of 21 cm. By the way, I didn’t grease the bottom of the mold with anything, I covered it with the same siliconized parchment. I was very pleased with the result in all respects - a very tasty, moist, aromatic cake! Soft inside and crusty outside. Besides, it was great to make a hole using a tin can)) And the recipe is really very simple and good! Thanks to the author!
