    How to bake apricot pie in the oven? This is the easiest pie ever! To begin, prepare the necessary ingredients according to the list. The butter should be at room temperature, so remove it from the refrigerator in advance. Take the highest grade flour. Large, selected eggs are needed. If the eggs are small, take one more.

    Wash the apricots and dry them. Cut each in half and remove the pits. To ensure that apricots retain their shape and do not spread, choose ripe but dense fruits.

    Beat soft butter at room temperature with sugar until fluffy.

    Add the eggs one at a time, beating the mixture with a mixer until smooth and fluffy after each. The result is an air mass. The eggs must be well beaten, then the cake will rise well in the oven.

    Gradually add the flour sifted with salt and baking powder. Beat the dough either with a mixer at low speed or stir with a spatula. It is very important to add flour in parts because you may need more or less. It is important to focus on consistency. For example, I needed 230 g of flour.

    The dough should be non-flowing, slightly dense, but not tough. The consistency should be such that the dough can hold the apricot halves on the surface without them falling through.

    Line a baking pan with a diameter of 20-22 cm with parchment, grease with butter and dust with flour. Transfer the dough into the prepared pan and smooth out.

    Place the apricots cut side up on top of the dough. Again, they should not fall into the dough, but lie on the surface. If desired, you can lightly sprinkle the apricots with sugar.

    Bake the pie in an oven preheated to 180°C for about 50 minutes. It is better not to open the oven for the first 25-30 minutes, otherwise the cake may settle. The exact baking time depends on your oven, the chosen shape and the thickness of the pie. It is better to take a closed, solid shape. Not a cooking ring like mine. Because the biscuit dough is quite liquid and until it sets, it may leak a little from below. You need a very even ring so that there are no gaps between it and the bottom.

I found halves of apricots in the freezer and I wanted a “summer” pie. I found a recipe with a simple composition and started cooking. First, I took the frozen apricots out of the freezer, laid them out in a single layer and left them in the warm kitchen to defrost. I don’t advise you to rush and do it in the microwave, the fruit can turn into “porridge”. I also took the butter out of the refrigerator. The dough is kneaded quickly and easily. It turned out thick, leaving a trace from the whisk, but after a while it tightens. I took a wide mold, laid out the dough, and topped with halves of apricots. Bake for 40 minutes at 180°. My pie is low and baked faster. A simple pie with apricots in the oven turned out very tasty. It has an unusual dough, something between a sponge cake and a cupcake. It is light, airy, with small pores. The fruits are baked and their sourness goes well with the sweet dough.
