STEP 1
How to make a seafood cocktail with rice? Prepare the necessary ingredients. The set of vegetables can be changed at your discretion. Choose the vegetables you like best. If the vegetables are frozen, defrost them in advance to remove excess moisture from the glass. You can buy a seafood cocktail ready-made or assemble it yourself. I have shrimp, squid and mussels. Thaw seafood in the refrigerator first. Olive oil can be replaced with any odorless vegetable oil.
STEP 2
It is better to use long-grain steamed rice. Rinse the rice well several times in cold water to remove starches on the rice grains. As a result, the rice will turn out crumbly.
STEP 3
Cook the rice in boiling salted water over medium heat until tender, stirring occasionally. Rice grains should be undigested, moderately soft, slightly elastic. Place the rice in a sieve to drain the water.
STEP 4
Wash the pre-peeled onions and cut into small cubes.
STEP 5
Peel the carrots, wash them, cut them into strips.
STEP 6
Wash the bell pepper, remove the seeds and stem, cut the pepper into medium strips or cubes.
STEP 7
Wash the zucchini and cut into small cubes. You can use regular zucchini. If the vegetable is young with thin, intact skin, it is not necessary to cut it off. If using a more mature vegetable, trim off the rough skin and scoop out the seeded center.
STEP 8
Peel the garlic. Cut the garlic into slices or finely chop.
STEP 9
Heat olive oil in a frying pan. Simmer the garlic over low heat for 1 minute until the oil becomes fragrant. Remove the garlic from the pan. If you want finely chopped garlic to be present in the dish, fry it along with onions and carrots.
STEP 10
Add chopped onions and carrots to the aromatic oil. Fry, stirring, over medium heat for 3-4 minutes.
STEP 11
Add green peas, stir. Fry for 1-2 minutes.
STEP 12
Place the zucchini in the pan and stir. Cook vegetables for 2-3 minutes.
STEP 13
Drain liquid from canned corn first. Add corn and bell pepper to pan. Mix everything. Fry the vegetables for a few more minutes, focusing on the softness of the vegetables.
STEP 14
Rinse the seafood cocktail in advance and place in a sieve to drain. Add seafood to fried vegetables.
STEP 15
Add salt, ground black pepper, a mixture of herbs, and stir.
STEP 16
Cook seafood with vegetables for 5-7 minutes until done.
STEP 17
Place cooked rice in the pan and stir. Warm the seafood cocktail with rice for 1 minute.
STEP 18
Serve the seafood cocktail with rice immediately, sprinkled with fresh herbs. Bon appetit!
