STEP 1
How to bake samsa with chicken from puff pastry at home? First, prepare the necessary ingredients for the dough. It is advisable to place the butter in the freezer for 30 minutes before kneading the dough. The water should be very cold, so it is better to add an ice cube to a glass of water. Sesame seeds can be used as desired.
STEP 2
Sift flour and salt into a bowl.
STEP 3
Make a small well in the center and grate very cold butter into it using a coarse grater.
STEP 4
Very quickly, lightly mix the butter into the flour. Do it very quickly and even a little sloppy, do not try to achieve a uniform crumb. The butter should remain in large chunks, as these chunks of butter will give the light, flaky texture.
STEP 5
Pour in ice water little by little. Do not pour in all the water at once; it is possible that you have “weaker” flour and it will take less water. It is better to add it in portions.
STEP 6
Knead the uneven dough. During kneading, do not bring the dough to homogeneity and mix it only until it can be molded into a ball! It is important! The butter should not melt from the warmth of your hands!
STEP 7
Place the dough in a bag and refrigerate for 1 hour.
STEP 8
Prepare the necessary ingredients for the filling.
STEP 9
Remove the skin from the chicken thighs and cut out the bone. Cut the meat itself into small pieces.
STEP 10
Cut the onion into small cubes. To prevent the onion from stinging your eyes when cutting, rinse it and the knife with cold water.
STEP 11
Wash and dry the parsley. Peel the garlic. Chop everything finely
STEP 12
Place all the prepared ingredients for the filling in a deep bowl, season with salt and pepper and stir. Turn on the oven to 180 degrees in advance.

Remove the chilled dough from the refrigerator and divide into 10-12 equal parts.
STEP 14
Take a few pieces of dough to work with and put the rest back in the refrigerator. Roll out each piece of dough into a circle about 3mm thick.
STEP 15
Place the filling in the center of the dough. Pinch the edges to form a triangle.
STEP 16
Place the samsa, seam side down, on a parchment-lined baking sheet.
STEP 17
Brush the samsa with beaten egg.
STEP 18
If desired, sprinkle sesame seeds on top of the samsa.
STEP 19
Bake samsa at 180 C for about 40 minutes until golden brown. The exact time depends on the power of your oven.
