Salad with shrimp and cherry tomatoes
Ingredients
Step-by-step preparation
STEP 1
How to make a salad with shrimp and cherry tomatoes? Very simple. First, prepare the necessary ingredients for the marinade. It will later become a salad dressing. I used extra virgin olive oil, but you can use any vegetable oil to your taste.
STEP 2
In a bowl, mix olive oil, soy sauce, lemon juice, honey and ground black pepper.
STEP 3
Now prepare the necessary ingredients for the salad base. You can use any tomatoes. I have cherry tomatoes. You can add or replace the vegetable part to your liking. You can replace king prawns with any other type of shrimp to taste, and also add other seafood, such as mussels, squid, etc.
STEP 4
If the shrimp are frozen, scald them with boiling water. I have already peeled the shrimp, leaving only the tail. If you have shrimp with a head and shell, take 1.5-2 times more so that after cleaning the shrimp there will be enough for the salad.
STEP 5
Pour the marinade over the peeled shrimp and leave for 20-30 minutes.
STEP 6
Heat a frying pan over high heat. Add the shrimp along with the marinade and fry for a couple of minutes. Then remove the shrimp from the pan and cool the resulting sauce.
STEP 7
Cut the cheese into thin slices or grate it on a coarse grater. Any cheese will do, from regular Russian cheese to suluguni and mozzarella. The main thing is that the cheese is tasty. I have young Parmesan.
STEP 8
Cut cherry tomatoes into halves or quarters. If you have a regular tomato, then cut it into slices. You need dense tomatoes. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.
STEP 9
Cut the avocado in half and remove the pit. Peel each half and cut into slices. It is important to peel the avocados in this order. After all, avocado contains essential oils and after removing the peel the fruit becomes slippery. You may cut yourself when cutting it in half.
STEP 10
Wash and dry the arugula. Tear large leaves with your hands. Instead of arugula, you can use other greens to taste. A ready-made mixture of lettuce leaves works well.
STEP 11
Place arugula, tomatoes, avocado slices, shrimp and Parmesan on a platter. Pour the sauce in which the shrimp were stewed and serve the salad. Bon appetit!
