    Boil the potatoes in their skins, cool, peel and cut into medium cubes. To make potatoes cut easier and into beautiful cubes, there are two tricks. First, boil the potatoes in advance, cool and let them sit in the refrigerator overnight. Then it will not stick to the knife, and you will cut it easily and evenly. If you don't have that much time, just peel it, cut it into cubes and boil it. After this, drain the water and cool.

    Wash the cucumber, wipe and cut into cubes, place in a bowl with potatoes. Be sure to try the cucumber, they can be bitter.

    Peel the eggs and cut into cubes. Add them to the bowl with the potatoes and cucumber. To make the eggs easier to peel, break the shells and let them sit in water for a few minutes. It will penetrate under the shell and you can easily remove it.

    Mix the salad carefully so that the salad does not turn into a mush. Season with salt, pepper if desired and add sour cream. It can be replaced with natural yogurt, mayonnaise or vegetable oil. Rinse the green onions, chop, sprinkle on top of the salad and serve immediately.

A simple salad with potatoes, eggs and cucumber in a hurry. I had boiled potatoes and eggs, so all that remained was to add fresh cucumber and green onions. This salad reminded me of spring, I want more greenery quickly) Fresh cucumber goes well with boiled potatoes, and eggs add tenderness to the salad. In general, the products are obtained without a pronounced taste, but the addition of green onions and freshly ground pepper significantly enlivens it) Sour cream, it seems to me, is very appropriate here; with mayonnaise there would be a sharper taste. I liked the salad, it was tender and pleasant. In addition to the meat it makes a good side dish)

I prepared a salad with potatoes, eggs and cucumber. For some reason the combination of products reminded me of summer picnics))). A simple but very tasty salad. Perfect for a hearty snack, as a completely independent dish. By increasing the proportions of fresh cucumber, we get a lighter option (especially if you season it with vegetable oil).
