In this salad, dor blue cheese with green mold can be replaced with both sharper types - Roquefort, Gorgonzola, and softer ones, for example, white mold cheeses - brie, camembert.

Cut the cheese into small slices.

In a preheated dry frying pan, heat the walnuts for 5 minutes, stirring occasionally.
STEP 4

Pour honey into the pan and fry the nuts over medium heat, stirring constantly until they are caramelized. Choose high-quality, natural honey. If it is thick or candied, then first melt it in a water bath.
STEP 5

Remove the stem and core from the pear. Cut the pulp into thin slices. Pour the juice of half a lemon over the pear to prevent it from darkening.
STEP 6

Prepare the dressing. Prepare food for her. Any vegetable oil will do, I used olive oil. Instead of grainy mustard, you can use ready-made Dijon mustard. Vinegar is replaced with lemon juice.
STEP 7

How to make a dressing? Combine olive oil, wine vinegar, mustard and salt. Whisk all ingredients until smooth.
STEP 8

Wash the arugula and lettuce leaves and dry well. Place lettuce leaves, pear slices, and blue cheese in a salad bowl.
STEP 9

Top with caramelized walnuts. Pour the dressing over the salad, mix gently and serve. Bon appetit!
