Dor blue, or dor blue, is a German blue cheese that is relatively young compared to other types. In addition, it is popular only in Russia, and few people know it in Europe. This can be explained simply: the manufacturer carried out a competent advertising campaign aimed at the Russian market.
This cheese takes up to five months to fully mature. It has many veins of blue mold. The cheese itself is creamy. The consistency is crumbly, but at the same time dense. Like any other types of blue cheese, Dorblue is served as an appetizer for red wines along with grapes. It can also be added to salads and snacks.
Dor blue is made in Bavaria from cow's milk (pasteurized) mixed with salt, special enzymes and mold. Which one exactly is unknown, since the company keeps the name secret.
There are three types of dor blue: classic, royal and grand noir.
