To remove the bitterness from onions, you can marinate them in a mixture of apple cider vinegar and sugar, or pour boiling water over them. The liquid from the bowl with the onions will need to be drained.

    Wash the carrots in running water with a brush, peel and grate on a grater for Korean salads; if you don’t have such a grater at hand, you can get by with a regular coarse grater. I grated the carrots on a coarse grater.

    Pour vegetable oil into a frying pan and heat it. Fry the onions in vegetable oil until golden brown over medium heat. You can use olive oil instead of vegetable oil.

    Cut the pickled cucumbers into small strips or in another way convenient for you. Pickled cucumbers add spice and piquancy to the salad. You can also use pickled cucumbers for the salad. Place fried onions, carrots and pickled cucumber in a salad bowl.

    Add garlic passed through a press to the salad bowl, salt and ground black pepper to taste. However, cucumbers provide enough salt to the salad, so you don't need to add salt. Mix everything and put it in the refrigerator for an hour, the salad will soak in, cool down and taste better. Those who like these dishes spicier can add a piece of chili pepper. I have homemade cucumbers, purple onions, they are juicy and sweet) I grated the carrots on a Korean carrot grater, I got thin stripes. Thanks to garlic, the salad became more flavorful. I prepared a salad with carrots and pickles. I used pickled cucumbers. I cut the onion into half rings, did not marinate it or give it boiling water, since the recipe calls for frying it and there will be no bitterness after frying. I grated the carrots using a Korean carrot grater and simmered them in a frying pan along with the onions. The cucumber was cut into strips. When the carrots and onions had cooled, I mixed them with cucumbers, added dry garlic, pepper, and lightly salted them. The salad turned out juicy and tasty. The ingredients combine perfectly.
