STEP 1

How to make a salad of tomatoes, peppers, carrots and onions for the winter? Prepare all the products indicated in the recipe. The salad turns out especially tasty and bright if you use seasonal vegetables.
STEP 2

Peel the carrots and onions. Cut the bell peppers into two parts, remove the core with seeds and the stalk. Rinse all vegetables and herbs in cold water and dry with a kitchen towel.
STEP 3

Cut the tomatoes in half and remove the stem attachment points. Cut each tomato half into slices, as in the photo. Place the tomatoes in a frying pan with a thick bottom and high edges. To prepare the salad, you can use a cauldron or pan with a non-stick coating.
STEP 4

Cut the onion into thin half rings and place in a frying pan.
STEP 5

Cut the bell peppers into thin feathers or semicircles. Send to tomatoes.
STEP 6

Grate the carrots using a coarse grater or a vegetable slicer for Korean salads. Add all ingredients to the pan.
STEP 7

Add salt, sugar and ground black pepper. At this stage, you can add any spices you like, as well as bay leaves.
STEP 8

Pour vegetable oil into the pan and mix everything well.
STEP 9

Place the frying pan on the stove and leave it covered over moderate heat for half an hour. During this time, the vegetables will release juice. Open the lid and taste the salad. If the vegetables are crunchy, leave the salad to cook for another 10 minutes. Sprinkle everything with finely chopped herbs.
STEP 10

Pour in the vinegar, mix everything and leave for 5-10 minutes until fully cooked.
STEP 11

Place the salad of tomatoes, peppers, carrots and onions in sterile jars. You can sterilize the container in a microwave, oven or water bath. Close the jars with sterile lids, turn the top upside down and wrap them in a warm blanket. Leave until completely cool.
STEP 12

Store jars in a cool, dark place all winter and longer.
