STEP 1
How to bake rye pie from rye flour? Prepare all the necessary ingredients. How to knead dough with rye flour? Take the butter, melt it in the microwave or on the stove, and let it cool to room temperature.
STEP 2
Beat a chicken egg into a deep bowl, pour in melted butter, add sugar, salt and sour cream. Using a whisk or mixer, mix the ingredients until a homogeneous mixture is obtained. Wash the egg in water and soda before use, as there may be harmful bacteria on its surface.
STEP 3
Take rye flour, sift through a sieve, add baking powder, mix. Add flour in small parts, stirring each time. Start kneading the dough first with a spoon in a bowl, then with your hands, adding flour as necessary. You may need less or more flour, depending on the required consistency of the dough.
STEP 4
The dough should be dense, but not filled with flour; it will stick a little to your hands, so you need to let it rest in the cold. To do this, wrap the dough in cling film and put it in the refrigerator for half an hour.
STEP 5
In the meantime, let's make the pie filling from cottage cheese and fresh herbs. For the filling I used parsley, dill, a couple of leaves of cilantro and basil. You can take any greens in the desired proportions. Wash the greens well, dry with a paper towel, finely chop with a knife and place in a bowl.
STEP 6
Add cottage cheese. It is better to use natural cottage cheese and always fresh. Choose the fat content of the product according to your taste. Add salt and ground black pepper to taste.
STEP 7
Mix the ingredients with a spoon or, if desired, use a blender to obtain a more homogeneous mass. If your cottage cheese is grain-based, you can first punch it with a blender or rub it through a sieve, and then mix it with herbs. Do what is most convenient for you.
STEP 8
Remove the finished dough from the refrigerator. Divide it into two parts. Roll out most of it into a thin layer.
STEP 9
Take a baking dish and grease it with vegetable oil. Place the rolled out dough into the pan, forming the edges into the edges of the pie.
STEP 10
Place the filling of cottage cheese and herbs on top.
STEP 11
Roll out the remaining dough into a circle to fit the mold and cover the filling with it. Pinch the edges of the pie nicely and make a hole in the center for steam to escape. Brush the top of the pie with beaten egg and make a few pricks with a fork to prevent the pie from cracking during baking.
STEP 12
Preheat the oven to 180 degrees, bake the pie for about 50 minutes, until golden brown. The times are approximate, be guided by the operating characteristics of your oven. Remove the finished pie from the oven, let it cool slightly and serve with tea, coffee or cocoa. Bon appetit!
