Roasted chickpeas

Ingredients
Step-by-step preparation
STEP 1

How to fry chickpeas? Prepare the necessary ingredients for the dish, as well as a frying pan. Read separate articles on how to choose a frying pan and oil for frying. There are links at the end of this recipe.
STEP 2

Soak the chickpeas overnight in plenty of cold water. While soaking, chickpeas may make slight clicking noises that can be heard even through the water. Therefore, if at night you hear an incomprehensible periodic crackling sound from the kitchen, then do not be alarmed - it’s chickpeas. If these clicks are too disturbing, you can move the chickpeas into the oven - nothing can be heard behind the hermetically closed door.
STEP 3

In the morning, drain the water, rinse the chickpeas and dry thoroughly. If droplets of water remain on the chickpeas, then upon contact with hot vegetable oil, the oil will begin to shoot strongly, and everything around will then have to be washed off from fat.
STEP 4

Heat vegetable oil in a frying pan over medium heat. Add the chickpeas and fry them, stirring occasionally, for about 20 minutes. You should not expect the peas to brown - the skin will shrink slightly, but the color will practically not change. Therefore, you should not fry peas for longer than the specified time, achieving a golden brown crust - they can become very dry. True, some people prefer this dry, crispy version.
STEP 5

When the chickpeas are hot, add paprika, chili, curry, ground pepper and salt. Mix the spices with the chickpeas and cook, stirring, for another 5 minutes.
STEP 6

Place the finished chickpeas in a container from which it will be convenient to eat. Chickpeas can be consumed hot or completely cooled. If you want to store the chickpeas longer, you need to completely dry them from fat on a paper towel, then put them in a dry container with an airtight lid. Store chickpeas in a dry place out of direct sunlight. I can’t tell you the exact storage time, because usually fried chickpeas are eaten unnoticed on the same day. Bon appetit
