You can use any vegetable oil you like, the main thing is that it is refined. From the spices I took curry, ground black pepper, salt, you can also use your favorite spices. Also prepare a deep frying pan.

    Peel the onion and garlic and chop finely. Place the frying pan on the fire, heat it and pour in some vegetable oil. Place the chopped onion in the frying pan and fry it over medium heat until translucent, stirring occasionally. Add chopped garlic and fry it along with the onion for about a minute.

    Wash the eggplant, dry it, cut it into small cubes, put it in a deep container and sprinkle with salt. Leave it on for about 10 minutes, then rinse with cold water. This way you will get rid of specific bitterness. You don’t have to do this if you are sure that you have a young vegetable. To prepare this dish, you can cut off the skin from the eggplant; I cook with the skin.

    Wash, peel and chop the carrots - grate on a coarse grater or finely chop. Add the chopped carrots to the frying pan with the onion and garlic and fry everything together over medium heat for 2 - 3 minutes.

    Add the chopped eggplant to the pan and stir. Turn the heat down to slightly lower than medium and continue frying all the vegetables together, adding more vegetable oil if necessary.

    Fry the vegetables until the eggplant is soft for 15 - 20 minutes, stirring constantly.

    Add steamed or other rice to the fried vegetables, stir and fry everything together for a couple more minutes.

    Pour two cups of boiling water into the rice and stir. Add selected seasonings, soy sauce, ground black pepper. Taste the dish for salt and add more salt if necessary. Simmer everything together until the rice is ready. The time will depend on the specific rice chosen and the cooking time. I simmered everything together for about 20 minutes.

Good afternoon everyone! Our family really loves rice dishes, be it regular boiled rice or holiday pilaf. Today we made unusual rice with eggplants. The rice turned out to be crumbly, golden in color and everyone liked it. The eggplants were peeled, cut into small cubes and salted to get rid of the specific bitterness. Meanwhile, I sautéed finely chopped onion and garlic until translucent, adding turmeric and paprika. Next I fried the carrots, as well as the washed and drained eggplants. Added rice. Stirring lightly, I fried it for several minutes, then poured in 1.5 cups of boiling water. (Still, the amount of water depends on the type of rice). Close the lid tightly and simmer for 20 minutes.
