Step-by-step preparation
STEP 1
Prepare all the above vegetables. Try to take eggplants, tomatoes and zucchini that are the same in diameter. This way the dish will not only be tasty, but also beautiful.
STEP 2
Bake the peppers in the oven until the crust is brown. If the pepper turns black on only one side, turn it over during baking. I only buy green peppers. I once read that all peppers are the same variety, just at different stages of maturity. Green is the youngest and has the least amount of harmful substances.
STEP 3
While the pepper is baking, chop all the eggplants, zucchini and 700g. tomatoes. I cut it on this grater. If it is not there, then cut it with a knife. Try to cut thinly, this will make the dish tastier. I couldn’t cut the tomatoes on this grater; they weren’t hard enough, so I cut them with a knife.
STEP 4
Chop the onion and fry in a frying pan until golden brown. You don't have to chop the onion finely, you can cut it larger.
STEP 5
Peel the baked peppers and remove seeds. Chop and add to fried onions. Simmer for 10 minutes.
STEP 6
The remaining 300g. Pour boiling water over the tomatoes, peel and chop. Add to the pan with the peppers and onions. Simmer until the liquid evaporates.
STEP 7
Pour the stewed vegetables into a blender. Add salt and pepper to taste and beat until smooth.
STEP 8
In a separate bowl, mix chopped herbs, vegetable oil (preferably odorless) and salt and pepper. Take the greens you like - parsley, dill, cilantro, basil. You can also add garlic at this stage. Grate 5 cloves on a fine grater. I don't add it because I don't like the smell of roasted garlic.
STEP 9
Pour the blended vegetables into the container where you will bake the ratatouille and smooth it out. Let's start collecting ratatouille. Place the eggplants, zucchini and tomatoes on top of the gravy, alternating with each other. When you have collected all the vegetables, pour the herbs and oil over them.
STEP 10
Cover with foil and place in an oven preheated to 180*C. Bake for 30-40 minutes.
