Wash the jam jars in running water and baking soda, and while still wet, place them upside down on a cold oven rack. Turn on the oven at 150 degrees, after reaching this temperature, sterilize 0.5 liter jars for 10 minutes, 1 liter jars for 15 minutes. Wash the lids and boil.

    Wash the Ranetki well under running water (there is no need to remove their tails), dry them and make several punctures in each from the side of the stalk with a wooden stick. This way the skin won’t smear on them and they will be better saturated with syrup. For jam, take any type of ranetki, it will turn out delicious in any case, but you should choose harder fruits, they will retain their shape better.

    Pour sugar into a saucepan, basin or stewpan, add water, stir and put on fire. While stirring, dissolve all the sugar, add a little citric acid, stir the syrup again.

    Dip the prepared apples into it. After boiling, pour syrup over them, try not to stir the jam so that the apples do not fall apart. Boil the jam, pressing the apples and pouring syrup over them, for about 10 minutes. Cool completely.

    Then bring the ranetki to a boil in the syrup again, pressing down on them, because. they constantly float up and turn over to the side that has already been boiled and soaked in syrup - this side is heavier. Cool the jam again, let the apples soak in the syrup, pressing them into the syrup with a suitable sized plate.

    Boil the ranetka jam with tails for the last time until done. Depending on the variety and size of the ranetki, this may take from 3 to 10 minutes. Cool the finished jam with transparent ranetki and pour into dry, sterilized jars, close with lids. It is not necessary to sterilize the jam, but it is better to store it in a cool place.
