    Wash the apples thoroughly and wipe dry. First cut them into quarters and remove the core. Then cut them into thin slices. The thinner the slices, the more beautiful the jam will be. I don’t recommend cutting off the skin; the slices may fall apart during cooking, and you will get jam, not clear jam.

    Now the chopped apples need to be weighed. And measure out exactly the same amount of sugar. Sprinkle apple slices with this sugar. It is better to do this immediately in the container in which the jam will be cooked. Leave the covered apples for 12 hours. This is necessary for the apples to give juice.

Place the bowl with apples on the fire and start heating, lightly stirring the future jam with a wooden spatula until the sugar is completely dissolved. If the syrup is still liquid, then cook the jam not for 5 minutes, but for 15, until it thickens.

I happened to have a whole bucket of small apples; I urgently needed to prepare some of these apples for the winter. I froze some of it and made clear apple jam into slices from the rest. The longest thing is to cut all the apples) I didn’t peel the peel so that the slices wouldn’t boil over, as the author advises. The apples were layered with sugar to release more juice. I left it in the refrigerator overnight, after which the apple slices literally floated in the sling) I also cooked it twice. After the first one, almost all the slices became transparent. They cooled and soaked in syrup for almost 10 hours. The second time I had already brought the jam to readiness, focusing on the caramel color of the apples and thickness.
