Bake a rabbit in the oven - it's very tasty! Rabbit is usually stewed in the oven with the addition of sour cream. It tenderizes the meat and makes a delicious sauce. Sometimes separately fried onions and carrots are added to the dish. I offer a more gentle and healthy option, in which meat and vegetables are baked in the oven. This is much more useful and simpler, and also less burdensome. The rabbit turns out simply amazingly tasty, the meat is soft, aromatic in a thick onion-carrot sour cream sauce, which can also be served as a side dish. Everyone who tries the dish will be delighted!

    Then pat the rabbit meat dry with a paper towel and marinate: sprinkle with salt and ground black pepper, add 1 tbsp. soy sauce. Mix the meat well, cover with film and leave to marinate in a cool place for an hour or two, depending on how much time you need until the dish is ready. Can be left in the refrigerator overnight.

    If the rabbit is fat enough, during cutting we collected the internal fat, but there is still enough of it left on the back and legs so as not to use oil. If your rabbit is not fatty, then grease the pieces of rabbit and the baking sheet with oil. Place the rabbit on a baking sheet and place in an oven preheated to 200 degrees so that the meat “sets” and seals all the juices.

    Meanwhile, coarsely chop three onions.

    Cut the carrots into cubes or large strips.

    Cut two or three large cloves of garlic into petals.

    Remove the lightly baked rabbit from the oven.

    Sprinkle everything with carrots. Toss the rabbit pieces with the vegetables and return to the oven so that the vegetables are also lightly baked. All this will take about half an hour.

    Dilute sour cream with water, add salt, and add a spoonful of soy sauce.

    Pour the resulting sauce over the rabbit and vegetables. Tighten with foil or cover the pan with a lid. Return the dish to the oven, after 20 minutes reduce the heat to 160 degrees. In total it took me 100 minutes to bake.

    At the end of cooking, remove the foil, turn the rabbit pieces over and with the grill or convection on, fry the top part of the meat.

We were treated to rabbit, so I decided to cook half of it right away. The carcass was large, so I froze the second part for next time. I thought for a long time about how to cook this rabbit, but I came to the conclusion that stewing it in the oven would be less troublesome for me. The rabbit was not young, so after cutting it into portions, I poured cold water on it with a little salt and left it to soak for three hours. First I baked it for half an hour at 200°, then mixed it with vegetables, covered it with a lid and put it in the oven for an hour. After that, I diluted the sour cream with water and soy sauce. I added it to the rabbit mold gradually, stirring constantly. This prevented the sour cream from curdling. I baked it for another hour. This dish can be prepared much faster if you take a young rabbit) And my rabbit stewed in the oven after all the manipulations turned out soft and tasty. It languished for a long time in a mixture of sour cream, spices and its own juice. It was soaked through, so that the meat became like stew) The rabbit meat turned out to be very tasty and tender!
