    Add the sifted flour and mix again. It may take a little more flour, depending on its properties; add a little more if necessary, but the main thing is not to overdo it so that the pancakes remain thin.

    Add vegetable oil and stir one last time. The dough is ready. Let it sit for a while (about 15-20 minutes, this is necessary for the development of gluten in the flour, otherwise the pancakes will tear).

    Prepare a frying pan for frying pancakes. To do this, you need to heat it thoroughly, lubricating it with vegetable oil. Personally, I use a peeled potato half, placed on a fork, for this. We scoop up the dough with a ladle from the very bottom so that the flour does not have time to settle. If you think there is not enough vegetable oil, you can add more. Pour a small amount of dough into the pan and turn it in different directions, evenly distributing the dough in a thin layer.

    Fry the pancake on one side until browned and turn it over to the other. Finish frying. We make the fire strong so that the pancakes do not have time to dry out. We use all the dough.

Quick pancakes require some skill in preparation. The dough turned out to be very liquid; in my opinion, there was not enough flour. At the same time, I reduced the amount of sugar (but sugar is not for everyone). I baked a few pancakes to try and, to my surprise, they turned out great. True, it was difficult to turn them over in a frying pan; the pancakes are very thin and tender (see the first photo, the pancake hangs from your hand like a rag). Perhaps in this recipe you need to use special double frying pans (I’ve seen these - you fry in one, cover with the other and turn over), but I don’t have one. So I didn’t bother and added another tablespoon of flour. It has become easier to bake pancakes and turn them over in a frying pan with a spatula, but they are no longer as airy as before (see the second photo, this pancake is denser, it hangs without bending). As for the taste, my family did not notice the difference. The final third photo shows two plates for comparison, in the first there are thin and tender pancakes according to the recipe, in the second - after adding additional flour. Therefore, even though the recipe works, this kind of work is too elaborate for me. And, of course, I give the owner 5 stars!
