I don’t have Georgian soft Imeretian cheese, with which khachapuri is often prepared, I made it from ordinary hard boiled cheese. And it turned out delicious! I could have mixed it with brine, but I didn’t. I want to say that even a child can handle this recipe! There is no need to knead anything with your hands, here the filling is both dough. I kneaded the dough easily and it immediately began to bubble. I mixed it with grated cheese and divided the mixture in half. As a result, I got two khachapuri about 2 - 3 cm thick. I fried them in melted butter under a lid until golden brown. At the same time, she showed the girls a fascinating demonstration of how to turn khachapuri using a lid). The flatbreads are delicious and very cheesy! They look delicious, soft and fluffy inside! It’s better to eat them hot right away, but you can also reheat them later and they will be as fresh. It was lucky that I looked here today - now I’ll fry it, and there’s no need to invent anything! I do it quite often, and I’ve adapted almost without difficulty: I buy grated Mozzarella cheese for pizza (220 g pack), pancake flour (it already has baking powder and everything else), I still add an egg... I really like that it’s on cream fried in oil - tastier! That's how lazy we become: neither kneading, nor rolling - beat with a whisk (so that we don't have to wash the blender later :)) And the older we get, the less we try to fuss - I judge by myself :) Thank you! I really liked the recipe, no need to bother with the oven. I add 2-3 cloves of garlic, in my opinion it’s more fragrant.
