STEP 2

Peel the pumpkin and grate it on a fine grater. You can pre-bake the pumpkin in the oven until soft and mash it into a homogeneous puree.

In a bowl, combine room temperature eggs with sugar and vanilla and whisk until smooth. If you wish, you can beat everything with a mixer until fluffy.

Add sour cream and stir. Sour cream is suitable with a fat content of 15%.

Add cornmeal sifted with baking powder and stir until smooth.

Add grated pumpkin to the dough and mix thoroughly.

You should get a semi-viscous, flowing dough. If the dough is too runny, like pancakes, add a little more flour.

Preheat the electric waffle iron. Pour in some batter and bake the pumpkin waffles for 3-5 minutes until golden brown. If they stick to the surface, you can grease the waffle iron with vegetable oil before baking each waffle. Nothing stuck to me even without oil. You can bake waffles in a multi-baker.
