Puff pastry boxes with filling

Step-by-step preparation
STEP 1
Prepare food. Bake or boil beets. Thaw the dough in advance / I usually take it out of the freezer and leave it in the refrigerator overnight /.
STEP 2
Lightly dust the table and dough with flour. Roll out the dough in one direction / carefully / to a thickness of about 5 - 7mm. Using a roller or knife, cut into rectangles of a size convenient for you. Cut the remaining dough into strips - sides.
STEP 3
Place rectangles on a baking sheet. Lubricate the joints with water and attach the sides. Cover with a napkin and leave for 10 minutes to proof. Then brush the top with egg (I often just coat it with vegetable oil).
STEP 4
Bake in a preheated oven at 200 degrees for about 18 minutes until golden brown. Cover with a napkin and let cool.
STEP 5
Prepare the filling: finely grate the cooled beets, finely chop the garlic, herring fillet, add mayonnaise and mix.
STEP 6
We put the filling into the boxes and decorate the top with a slice of herring and herbs. Bon appetit !
