    How to make fluffy cheesecakes with rice flour in the oven? Prepare your food. Take cottage cheese with a low fat content, cheesecakes will be low in calories. Choose dry, non-grained cottage cheese without added vegetable fats. Instead of yolks, you can use a whole egg. The amount of sugar is approximate; you can reduce it or not use it at all. Add vanillin to the sugar to taste or use vanilla sugar straight away.

    Place the cottage cheese in a bowl, add the yolks, add sugar and a pinch of salt - it will enhance and balance the taste. Add rice flour. Mix all products with a fork until smooth. If you have very grainy cottage cheese, you can punch the dough with a blender. If the cottage cheese was very wet, then more flour can be added to make the dough thick enough.

    Turn on the oven to preheat at 180°C. Take a baking tray and line it with baking paper (I used a Teflon mat). If you are not sure about the quality of your parchment, then grease it with a drop of vegetable oil. Use your hands to form cheesecakes of the same size and place them on a baking sheet at a short distance from each other. To make the PP cheesecakes uniform and even, cover them with a glass and roll them in a few circles with a little effort.

    Slap the top of the fluffy cheesecakes with a spatula. Bake the cheesecakes for 15 minutes on one side, then remove the baking sheet and turn them over to the other side. Bake for another 7-10 minutes, until golden brown on the bottom. Remove the finished cheesecakes from the oven and remove from the paper onto a plate.

I wanted to cook something light and tasty. I came across a recipe on the website: PP cheesecakes with rice flour in the oven, which caught my interest. Moreover, there was a pack of cottage cheese in the refrigerator. To the cottage cheese I added an egg, rice flour, sugar and vanilla sugar. Mixed until smooth. Placed on a baking sheet and baked for 15 minutes first, then turned the cheesecakes over and baked for another 10 minutes. It's that simple and fast!
