    Cut the veal and chicken fillet into small pieces, then chop into mince with a sharp knife. Do not use a meat grinder or blender!!!

    Air dry slices of white bread for about 2 hours. Pour cream over the dried bread and leave for 15 minutes. Knead the soaked bread thoroughly with your hands.

    Cut 2/3 of the cold butter into cubes and place in the freezer for 10 minutes.

    Cut the onion into cubes and fry over low heat, stirring, for 5 minutes. Remove from heat and let cool slightly.

    Add fried onions to the resulting minced meat along with oil from the frying pan and bread along with the liquid. Salt and pepper.

    Beat the minced meat on a work surface. Then add frozen butter cubes.

I really wanted to try Pozharsky cutlets without eggs. I decided to cook Pozharsky cutlets, but without veal, only with chicken fillet. I did not dry the white bread and filled it with milk. I prepared the minced meat and salted it, but did not add pepper, since the child also loves cutlets. Instead of ground black pepper, I added some ground coriander. I formed the cutlets, breaded them and, as recommended by the author, put them in the refrigerator. I fried the cutlets until golden brown in vegetable oil and butter 1:1 so that the butter did not burn. I served proper Pozharsky cutlets with pasta for dinner for the whole family. This recipe made amazing cutlets! They are very juicy and tender, soft and aromatic, and most importantly delicious! Both adults and children liked the cutlets) A worthy recipe! Thank you!

Natusik, the cutlets in the photo are simply stunning. I know that they are very juicy - butter is the reason. I heard that if you want the minced meat to be juicy, you need to add water and add butter to preserve it. The chicken added tenderness, and since the chicken meat is not fatty and the loaf has nowhere to extract fat from, the cutlets are probably also airy. I've kind of worked up an appetite
