For baking, you need to choose the right potatoes, because there are varieties that will remain raw inside even after an hour in the oven. In the store, the names of the varieties are not written on the price tags, so be guided by the color of the pulp: the lighter it is, the more starch it contains and the faster the potatoes will cook.

    Wash the potatoes thoroughly and scrub thoroughly with a brush to remove all the soil. Dry the tubers. It is better to take large potatoes, it is more convenient to prepare them for baking and they look more impressive.

    Using a fork, scratch grooves along the entire length of each potato, trying to make them deeper. The deeper the furrows are, the tastier and more textured the finished potatoes will be.

    Using your hands, rub the salt, pepper and herbs into the potatoes. I have Italian herbs in the grinder along with sea salt, so I didn’t use any extra salt. You can replace these spices with a ready-made potato spice mix.

    Place the potatoes in a single layer in a baking dish or on a small baking sheet. Pour vegetable oil into the mold so that it covers the entire bottom. Any vegetable oil will do. I have sunflower.

    Place the potatoes in an oven preheated to 180°C for 20-30 minutes. Then carefully turn the baked potato over so the browned side is facing up. Return the pan to the oven for another 10-15 minutes until golden brown on the other side. The exact baking time depends on the size, type of potatoes and the features of your oven. Actually, I was going to bake potatoes in their skins in the oven today, but my husband saw the prepared potatoes and persuaded me to bake them in the tandoor. Although the conditions are approximate) And I took young potatoes, now is the season to bake them in their skins! Use a sharp-toothed fork to make slits and marinate. It seems to me that out of all the marinade, vegetable oil plays the main role here. Thanks to him, this delicious golden crust is obtained. I didn’t have a ready-made mixture of herbs, so I mixed it to my taste. I took rosemary, basil, dill, all dried, and added salt and freshly ground pepper. Our potatoes turned out great! It's so delicious, you just can't stop eating it. So fragrant! And most importantly, inside it was also marinated, even in the middle. Great recipe, thanks!

Hello. I want to say thank you very much for such a simple and quick recipe. Now I often cook potatoes this way. The first time I “scratched” the potatoes with a fork, the next times I made cuts with a knife, it seemed easier to me. I tried it with different spices, it turns out delicious. I cook at 190 degrees, put it in a preheated oven for 30 minutes, then turn it over and another 10 minutes (i.e. 40 minutes total) These potatoes can be served with any side dish!
