STEP 1

How to make dumplings with potatoes and lard? First prepare the dough, it will be in boiling water. How to make the dough? Boil water, pour it into a bowl, add salt, pour in vegetable oil. Add the sifted flour and knead a fairly tight, smooth dough: first mix with a spoon and then with your hands, on a table sprinkled with flour. Form into a ball, wrap in cling film and set aside to rest while you prepare the filling.
STEP 2

Prepare the filling. How to make the filling? Wash the potatoes well, peel and grate on a coarse grater. Peel and chop the onion. Cut fresh lard into small cubes.
STEP 3

Mix all ingredients for the filling in a bowl, add salt to taste. Instead of garlic powder, you can take 3-4 cloves of fresh garlic and press it through a press.
STEP 4

Form the dough into a sausage and divide it with a knife into small equal pieces. You will get 20-30 pieces, depending on the size of the dumplings. Sprinkle them with flour.
STEP 5

Roll out the pieces of dough into flat cakes with a rolling pin. Place a small amount of filling on them. Make the dumplings in the classic way: fold them in half, pinch the edges together like dumplings and fasten the two ends together with a circle.

In this way, make dumplings from all the dough.
STEP 7

Place a saucepan with plenty of water on the fire. When the water boils, salt it and add the first batch of dumplings. Stir and cook them over low heat after floating for 5 minutes. You can also add dry seasonings (for example, Italian herbs) or bay leaves to the water.
STEP 8

Remove the finished dumplings to a plate with a slotted spoon and brush with butter. Brew the next batch. It is better to cook in small batches so that the dumplings float freely in the pan, then they will not stick together and stick to the bottom. You can also drain the dumplings in a colander and let them cool a little so they don’t stick together.
