Today for afternoon snack I made porous pancakes with holes according to this recipe. I like choux pastry made with kefir; it makes tender pancakes. This time I diluted half the portion. I added all the ingredients according to the recipe. I poured boiling water and soda in a thin stream and continuously stirred the dough with a whisk. I fried the pancakes in a non-stick frying pan and lightly greased them with oil before starting. The dough does not stick and bakes well. If you heat the pan too hot, the dough will bubble. But I think it's better to do it in a cast iron frying pan. Mine is light, cools quickly and holes don’t appear much. However, the pancakes turned out great! They are soft and easy to roll up. Very tasty, you can't taste the soda at all. I also added vanilla for flavor.

Very unusual holey pancakes! I cooked these for the first time, I was pleased with the taste of the finished pancakes - tender, airy, light, and they were cooked very quickly - 20-30 minutes. The only thing that requires some skill is the process of frying these pancakes. They really only need to be fried in a hot frying pan, otherwise you simply won’t be able to turn the pancake over to the other side (tested on myself)))), so after each pancake I put the pan on the stove and only then poured in the batter. As for the rest - superb pancakes!!! I offer my recipe, they are also great

Fiesta, yes, you are right - I also fry all the pancakes in a hot frying pan, only when I remove the pancake from the frying pan, I immediately pour the dough onto it and put it on the stove. This doesn’t work with these pancakes; here, after I remove the pancake from the frying pan, I return the pan to the stove, heat it for a couple of seconds and only then pour in the batter. That's the trick)))
