STEP 1
How to make meat with eggplant in a frying pan? Prepare all the necessary products that are indicated in the recipe. Which part of the mascara is best to use? The neck is ideal for this recipe, but any part of the animal can be cooked. I used boneless loin. Rinse a piece of meat in clean water and dry with paper napkins.
STEP 2
Peel the carrots, onions and garlic. Wash all vegetables. Cut the bell peppers in half and remove the core and seeds. Cut the stems off the eggplants.
STEP 3
Cut the eggplants into large pieces. If you have a blue variety that is bitter, then add a small amount of salt to the eggplants, stir and leave for 15-20 minutes. Next, rinse the pieces in water and dry. I missed this step. Cut the bell peppers into large cubes. If you take peppers of different colors, the finished dish will look bright and appetizing.
STEP 4
Cut the onion into cubes, the carrots into thin slices, and chop the garlic as desired.
STEP 5
Cut the pork into pieces of approximately the same size. You should not make the pieces too small, otherwise the meat will turn out juicy and tender.
STEP 6
Heat the vegetable oil well in a thick-bottomed frying pan. Send the meat to fry. Stirring, cook over high heat until the pieces are browned.
STEP 7
Add onions, carrots and garlic to the meat. Stirring occasionally, fry everything together for about five minutes. The onion should become slightly translucent.
STEP 8
Add eggplants and bell peppers to the pan.
STEP 9
Stir tomato paste in water until smooth. The amount of water may differ from that indicated in the recipe depending on how much liquid you want in the finished dish. Salt and pepper to taste. At this stage of cooking, you can add your favorite herbs and spices. Mix everything thoroughly, after boiling, reduce the stove flame to moderate and simmer the pork under a closed lid until cooked.
STEP 10
Sometimes open the lid and stir everything. It took me about 50 minutes for the dish to cook. Sprinkle the meat with finely chopped herbs and remove the pan from the heat.
STEP 11
Pork with eggplants and vegetables in a frying pan is ready! Serve hot.
