  1. STEP 1

    STEP 1

How to make an accordion from pork? First, prepare the marinade. You can replace dry garlic with 2 cloves of fresh garlic, passed through a press. In addition to these ingredients, you can add another 1-2 tbsp. l. tomato paste or ketchup.

  2. STEP 2

    STEP 2

In a bowl, combine soy sauce, olive oil, lemon juice, dry garlic, mustard and spices. Mix everything until smooth. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain ground pepper, take this into account, otherwise you risk over-peppering the dish. There is no need to add salt either - soy sauce replaces it.

  3. STEP 3

    STEP 3

Now prepare the rest of the ingredients. Take tomatoes that are ripe, but strong, so that they do not spread when slicing and baking. You can use any cheese you like: it can be ordinary cheese like Russian, or mozzarella for pizza is also suitable.

  4. STEP 4

    STEP 4

Wash a piece of pork and dry it with paper towels. If you want fattier and juicier meat, take the neck, if with a moderate amount of fat, carbonate will do.

  5. STEP 5

    STEP 5

Make deep transverse cuts every 1 cm, not reaching the bottom 1 cm.

  6. STEP 6

    STEP 6

Brush the pork outside and inside the cuts with the marinade you prepared earlier. If you have a lot of marinade, it is better to place the meat in a deep bowl and pour this marinade over it. Leave the meat to marinate overnight in the refrigerator. If you don’t have time, then leaving the meat for 1-1.5 hours at room temperature is enough.

  7. STEP 7

    STEP 7

While the pork is marinating, cut the tomatoes into thin slices.

  8. STEP 8

    STEP 8

Cut the cheese into thin slices.

  9. STEP 9

    STEP 9

Place the meat accordion on a double sheet of foil. Insert 1-2 mugs of tomatoes and 1-2 slices of cheese into the cuts on the meat

  10. STEP 10

    STEP 10

Wrap the meat in foil and raise the edges up to prevent the meat juices from leaking out during baking.

  11. STEP 11

    STEP 11

Place the pork in foil in a suitable sized baking dish. I took a form so that the meat lay tightly in it and did not lose its shape during baking.

  12. STEP 12

    STEP 12

Bake the pork accordion in an oven preheated to 190˚C for about 50 minutes. Then unfold the foil and return the meat to the oven for about 20 minutes until a golden crust appears on the surface. The exact baking time depends on the features of your oven, so use it as a guide.

  13. STEP 13

    STEP 13

Pork accordion meat in the oven is ready. Transfer it to a dish, garnish with herbs and serve. Bon appetit!
