Step-by-step preparation
STEP 1
How to bake pollock in a marinade with carrots, onions and tomato paste in the oven? Prepare your food. Frozen pollock must first be thawed. The amount of onions and carrots is approximate, some people like there to be a lot of marinade with vegetables, others prefer less, adapt to the family’s preferences. Tomato paste can be replaced with tomato sauce or tomatoes in their own juice. Prepare a frying pan and a baking dish.
STEP 2
Peel and wash the onions and carrots. Chop the onion as desired and grate the carrots on a coarse grater. Heat vegetable oil in a frying pan. Fry the onion in a frying pan until transparent. Add chopped carrots and fry everything together until the vegetables are soft over medium heat, stirring constantly.
STEP 3
Dilute the tomato paste with warm water until smooth, add salt to taste. Pour the liquid over the vegetables, add black peppercorns, allspice and bay leaves. Stir and cook everything together for about 5 minutes, then turn off the heat.
STEP 4
Rinse the defrosted fish under running water. Use scissors to cut off the fins and tail. Remove all the insides and black film, rinse the fish again. If there is a head, cut it off. Cut each carcass into small portions and dry with a paper towel or napkins.
STEP 5
Mix flour with a little salt. Heat a frying pan and pour vegetable oil into it. Roll each piece of fish on all sides in flour and place in a heated frying pan. Fry the fish evenly on both sides to form a golden brown crust, literally a couple of minutes at a time. Turn on the oven to preheat to 180 degrees.
STEP 6
Place some of the prepared vegetables with marinade (about 1/3) into the selected oven dish. Place fried pollock pieces evenly in one layer on top. Read about how to choose a baking dish in a separate article at the link at the end of the recipe.
STEP 7
Place all the remaining marinade with vegetables on top of the fish, cover the pan with foil and place it in a preheated oven for 35 - 40 minutes. The exact time depends on your oven. You can learn about the operating features of ovens by reading a separate article, link at the end of the recipe.
STEP 8
Carefully remove the marinated pollock from the oven and remove the foil. Place the pieces of fish with sauce and vegetables into portioned plates. Bon appetit!
