Plum sauce for meat

STEP 1
How to make plum sauce? The first step is to choose plums. For the sauce, it is better to use sour plums. In the recipe I used cherry plum, it is moderately sweet and sour. So, select ripe whole berries, remove the stalks and wash the plums thoroughly.
STEP 2
Remove all the seeds and place the plums in a large cup or pan.
STEP 3
Prepare all other ingredients. For herbs, use parsley and basil; they will add an amazing aroma to the finished sauce. Adjust the amount of garlic and pepper to your own taste; if you like it spicier and more aromatic, then increase the amount of these two ingredients.
STEP 4
Peel the garlic. Wash the greens, peppers and garlic cloves well.
STEP 5
Add salt and sugar to the plum and place the bowl over high heat. After boiling, reduce the flame slightly and, stirring, cook the plum for about 7-10 minutes.
STEP 6
Meanwhile, remove the seeds and stems from the peppers, cut the chili into thin half rings.
STEP 7
Chop the greens.
STEP 8
Pass the garlic through a press or grate it on a fine grater.
STEP 9
Add suneli hops to the bowl with plums.
STEP 10
Next, add the herbs, garlic and chili. Stir and leave on the stove for 10-15 minutes.
STEP 11
Using an immersion blender, puree the plums into a smooth puree. Taste for salt and sugar. Since my plums are sour this time, I added a couple more spoons of sugar.
STEP 12
If you are completely satisfied with the taste of the sauce (salt and sugar), then place the bowl on the stove and cook for another 5-7 minutes.
STEP 13
Pour the prepared plum sauce into pre-sterilized jars and close with sterile lids. Turn the workpiece upside down and leave it until it cools completely under a warm blanket. Store the jars in a cool, dark place.
STEP 14
Ready! Amazingly delicious with chops, poultry and more.
