    How to cook plum compote for the winter in a 3 liter jar with pits? First of all, prepare the plums. You can use any variety of berries. Or combine several varieties of plums at the same time. I made compote for two jars, so I doubled the quantity of all components.

    For compote, choose whole berries without blemishes. Remove wormy specimens. Remove the stems from the plums and wash the berries thoroughly in cold water.

    Wash a three-liter jar with baking soda and rinse several times in clean water. Sterilize the jar using any method available to you. I usually do this in a water bath. Pour boiling water over the lid and keep it this way for 5-10 minutes. Add plums to the jar. The number of berries can be slightly increased or decreased as desired. Pour sugar and citric acid into a jar.

    Boil the water. Fill the jar with boiling water up to the neck.

    Cover the top with a sterile lid and immediately roll up with a special key. Using a towel, take the hot jar and shake it from top to bottom. This way you will check the jar for leaks and dissolve the sugar inside the compote.

    Turn the container upside down and wrap it in a warm blanket. Leave until the compote has cooled completely. It takes me about a day or two.

I saw on the website a recipe for plum compote for the winter for a 3-liter jar with seeds and decided to make it. I didn’t roll up the jar, but made a compote to drink now. I had a frozen yellow plum, and I made a compote from it. I used a little more water, about 200 ml. The compote turned out to have a rich and bright plum taste. Honestly, I was afraid that with 1.5 cups of sugar it would turn out very sweet, but no, just right. Zhemchuzhina, thank you very much for the recipe for such a delicious compote!

It is good to prepare compote from plums for the winter, when they are fully ripe, but not yet overripe. Usually I prepare assorted plums and apples, but this year there are few apples, so there will only be compotes made from plums. My fruits are pink-purple (prunes), so the compote turned out to be a beautiful pink color. I decided to take 300 g of sugar, so it tasted sweeter. After pouring, I left the jars for an hour so that the plums were well saturated with water. But I forgot to pierce the skin with a toothpick and some of the cream burst, but this is not critical) And I also noticed that the plaque on the plum subsequently floats to the surface and forms a film. I don’t know if this is harmful during storage, but just in case, I carefully wiped each cream after washing. Happy preparations everyone!
