STEP 1
Ranetki of any color and variety, even wild ones, are suitable for compote. But it is important that the apples are undamaged and not overripe. It is better if the ranetka is removed from the tree. STEP 2
The first step in this recipe is to prepare the jars; everything else won’t take much time or effort. Wash the jars with baking soda and rinse well under running water. Place wet in a cold oven with the neck down, and also arrange the lids. Turn on at 150 degrees, after reaching the set temperature, sterilize 1l jars - 15 minutes, 2l - 20, 3l - 25 minutes. For me, this method of sterilization is the most convenient, I have been using it for many years, and it has not let me down.
STEP 3
Sort out the Ranetka, you can leave the tails as you wish. Rinse well under lukewarm running water and let the water drain.
STEP 4
Fill sterilized jars with ranetki 1/3 or more, but not very tightly. I added a handful of black rowan. Boil water and carefully pour straight from the kettle into jars to the top. Cover with a lid and leave for 20 minutes, during which time pasteurization will occur. Fill only with boiling water, as much as will fit in the jar; I needed 1 liter of water in 2 jars. It’s convenient for me to cook in 0.720 jars; for a large family, take large 1-3 liters.
STEP 5
After the allotted time, drain the water from the cans into a saucepan, conveniently draining through a special lid with holes.
STEP 6
Add another 100 ml of hot, boiled water and sugar, stirring and bring to a boil. Let the syrup simmer for about 3 - 4 minutes. Add citric acid to each jar using the tip of a knife. Then refill the jars with ranetka with boiling syrup and overflow.
STEP 7
Cover with a lid, leaving in this position for 2-3 minutes so that the air bubbles contained in the water and fruit rise to the surface of the water, after which screw the lid on. Wipe and roll on the table, checking for sealing. If there is not enough syrup, just add boiling water. Turn it over onto the lid, cover it with a blanket and leave it to cool. Then immediately take it to a cool, dark storage place or put it in the refrigerator.
