Pies with apricots in the oven

Even the neighbors will come running to the heady aroma of these pies! Come in too! Ah, summer is a wonderful time for ripe berries and fruits! And I especially love apricots - fortunately, we had a great harvest of them this year! Apricot pies are simply delicious - sweet and sour, aromatic, fluffy! Fairy tale!

Step-by-step preparation

Cooking timeCooking time: 2 hr 20 mins
  1. STEP 1

    STEP 1

Here are the ingredients needed for the dough

  2. STEP 2

    STEP 2

    Beat egg with sugar

  3. STEP 3

    STEP 3

Add salt and beat a little more

  4. STEP 4

    STEP 4

Pour in warm milk. It is better to take milk that is not very fatty, 1.5% will be enough. If the milk is homemade, it is better to dilute it with water 50:50

  5. STEP 5

    STEP 5

    Mix dry yeast with flour

  6. STEP 6

    STEP 6

Now combine the dry and liquid ingredients and mix

  7. STEP 7

    STEP 7

    Add the oil last

  8. STEP 8

    STEP 8

Using a spoon and then using your hands, knead the dough. You need to knead for 10-15 minutes, as they say, “until it stops sticking to your hands.” I usually trust this process to a bread maker, it helps me a lot with this!

  9. STEP 9

    STEP 9

The dough is well kneaded, beautiful, even, smooth and elastic.

  10. STEP 10

    STEP 10

Cover the dough with a towel and leave it alone in a warm place for 1 hour.

  11. STEP 11

    STEP 11

And these are the ingredients for the filling. The recipe is not strict - you may need more or less sugar or apricot, depending on how sweet you like your pies and how many apricots will fit in 1 pie)

  12. STEP 12

    STEP 12

We just need to wash the apricots and remove the seeds, this process is short, so it’s better to do this when the dough is almost ready

  13. STEP 13

    STEP 13

After an hour our dough had risen very well.

  14. STEP 14

    STEP 14

The photo shows how airy and porous it is, even though we didn’t use dough, but mixed dry yeast directly with flour - after all, our yeast is fast-acting dry

  15. STEP 15

    STEP 15

Now divide the dough into small balls. I got 25 pieces.

  16. STEP 16

    STEP 16

That's all - now all that remains is to make our pies

  17. STEP 17

    STEP 17

We knead each piece with our hands into a flat cake, put a few apricots and 1-2 teaspoons. l. Sahara

  18. STEP 18

    STEP 18

We seal the edges well and get a beautiful pie! We place it with the seam up so that the filling does not leak out.

  19. STEP 19

    STEP 19

Place the pies on baking parchment greased with a little vegetable oil

  20. STEP 20

    STEP 20

To grease the pies, lightly beat the egg.

  21. STEP 21

    STEP 21

Brush the pies with egg and they will take on a beautiful shiny golden appearance when baked.

  22. STEP 22

    STEP 22

Place in the oven to prove for about 15 minutes at minimum temperature. During this time the pies will rise well

  23. STEP 23

    STEP 23

Then bake at 180 degrees until golden brown. Baking time depends on your oven. Today I have an electric oven, top and bottom, and it only took me 25 minutes to bake.

  24. STEP 24

    STEP 24

Lightly sprinkle the finished pies with some water, cover with a towel and let cool. The aroma is simply magnificent!

  25. STEP 25

    STEP 25

    Enjoy your tea!

And why haven’t I made pies like this before?! It's just a fairy tale! The dough is soft and fluffy, the filling is sweet, the pies just melt in your mouth. Tomorrow I’ll make pies with apricots in the oven. I made the butter dough according to the recipe, it is tender, elastic and pliable. It came out perfectly in the time specified in the recipe. For the filling, I cut the apricots into cubes, because I like small pies and the apricot halves did not fit in them. Good advice in the recipe, but out of habit, I put the pies on a baking sheet with the seam down and the filling leaked a little. I baked pies with apricots in the oven for half an hour at 180 C. The aroma was magical, the pies were well browned, thanks to the egg. Tender, soft, juicy, sweet, appetizing and incredibly tasty pies according to this recipe. I recommend it to everyone! Thanks to the author!

Thanks for the recipe! We've had a lot of apricots this year. Tomorrow I will bake pies according to your recipe. I will also make the dough in a bread maker. She helps me out a lot. I often make dumplings. dumplings, so while I’m making minced meat, my “beauty” will already prepare the dough.

Thank you very much for such a wonderful pie recipe. Everything works out easily and simply. The dough is simply excellent. The pies turned out tasty and aromatic. I am delighted. I made everything exactly according to your recipe. I would like to tell novice housewives not to overdo it with the filling. Everything should be in moderation.
