  1. STEP 1

    STEP 1

How to make a pie without filling? Prepare your food. To help the cake rise better and be fluffier, remove them from the refrigerator in advance to warm them up. Take milk of any fat content, oil - refined, odorless.

  2. STEP 2

    STEP 2

Wash and dry the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Separate the whites from the yolks into separate bowls. Set aside the whites for now.

  3. STEP 3

    STEP 3

Pour milk into the yolks and stir with a whisk until smooth. Then add the oil and stir again.

  4. STEP 4

    STEP 4

Sift the flour. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking. Add baking powder, salt and half the sugar to it. Don't be afraid of salt in sweet baked goods - it acts as a flavor enhancer. Mix dry ingredients with a spoon.

  5. STEP 5

    STEP 5

Start beating the reserved egg whites with a mixer at low speed. When they turn slightly white, increase the speed. Without ceasing to beat, pour the remaining sugar into the whites. Beat the whites until soft peaks form - the mass should become smooth, white and shiny.

  6. STEP 6

    STEP 6

Fold the whipped whites into the yolk mixture using a whisk, using gentle movements from bottom to top.

  7. STEP 7

    STEP 7

Then add flour in portions, stirring the dough after each addition. You should get a homogeneous dough with a consistency like thick sour cream. Flour from different manufacturers has different properties, so you may need less or more of it than indicated.

  8. STEP 8

    STEP 8

Take a baking dish and grease it with a drop of vegetable oil. I have a round shape d18cm. Pour the prepared dough into it.

  9. STEP 9

    STEP 9

Bake the pie in an oven preheated to 180°C for 25-30 minutes. Check readiness with a wooden stick - it should come out dry from the middle of the pie. Remove the finished pie from the oven, cool and release from the mold. The times are approximate, be guided by the operating characteristics of your oven.

  10. STEP 10

    STEP 10

Serve the pie to the table. You can sprinkle it with powdered sugar. Bon appetit!

When I saw the recipe for a pie without filling, at first I didn’t understand how this was possible). After all, berries and fruits are usually added to sweet pies. I decided to see what would happen and baked this amazing pie. I repeated all dosages of products and technology according to the recipe. I just added the zest from one tangerine for extra flavor. I mixed the whites with the yolk mixture carefully, and mixed in the flour even more carefully with smooth movements. The dough turned out like airy cream. The pie was baked in a mold with a diameter of 20 cm for about 40 minutes. The baked goods did not fall when cooled. I cut the pie while it was still warm, it slices perfectly and doesn’t crumble. It tasted great! I didn't even expect it). It is not like a regular sponge cake, this cake is juicy, springy, silky! It does not need to be soaked or glazed. The aromas of vanilla and tangerine went well together, I think I’ll add lemon zest next time. I definitely recommend the recipe and will use it often myself! Thanks to the author!

According to this recipe, the pie turns out very tasty, fluffy, airy. On March 8th I made it as a gift for my mother and covered it with thick custard cream on top. But for those in a hurry (like me), you can immediately beat the eggs with sugar (the mixer arrived for the holiday, everything is lighter and airier with it), when they turn white and double in size, pour in the milk and butter, mix at a lower speed. I always don’t have baking powder, so I added a teaspoon of vinegar, sifted the flour here and sprinkled it with a level teaspoon of baking soda, mixed it with the same mixer and put it in the oven. I took a large pan and it baked quickly.
