STEP 1

How to make a pie with rice, dried apricots and raisins? To begin, prepare all the necessary ingredients according to the list. Start cooking with the dough. The butter should be at room temperature, so remove it from the refrigerator in advance.
STEP 2

In a bowl, combine sifted flour, soft butter, sour cream, sugar, soda and salt.
STEP 3

Knead into a soft, elastic dough, adding a little more flour if necessary. At first, the dough sticks strongly to your hands, but quickly enough it begins to lag behind both your hands and the walls of the bowl.
STEP 4

Roll the dough into a ball, wrap in film and refrigerate for 30 minutes.
STEP 5

Meanwhile, prepare the filling. In addition to dried apricots and raisins, you can add prunes or chopped nuts.
STEP 6

Cook the rice in plenty of boiling water until tender, about 15 minutes. See the packaging for the exact cooking time. Place the finished rice in a colander and let all the water drain.
STEP 7

Rinse the raisins and dried apricots, pour boiling water over them and leave for 10 minutes. Then drain the water and dry the dried fruits.
STEP 8

Cut dried apricots into small pieces.
STEP 9

Melt the butter and cool.
STEP 10

In a bowl, combine fluffy rice, dried apricots, raisins, sugar and melted butter. Mix thoroughly.

Now make the streusel.

In a blender bowl, combine flour, diced cold butter and sugar. Grind everything into crumbs. You can grind the dough into crumbs with your hands, but I have been using a blender for this purpose for a long time - it’s much faster.

Divide the chilled dough into two unequal parts. Roll out most of it into a circle.
STEP 14

Place in a baking dish (Ø 20 cm) and form high sides. Place the filling on the dough and smooth it out.
STEP 15

Roll out the second part of the dough into a circle equal to the diameter of the mold and cover the filling. Pinch the edges. Make a round hole in the center to allow steam to escape.
STEP 16

Sprinkle the top of the pie with streusel. Bake the pie in an oven preheated to 180°C for about 30 minutes. The exact baking time depends on your technique.
STEP 17

Remove the finished pie from the pan and cool. Then cut into pieces and serve. Bon appetit!
