Pear in red wine
Step-by-step preparation
STEP 1
How to make pear in red wine? Prepare all the necessary ingredients. Choose medium-sized, firm pears, preferably the Conference variety. You can take dry or semi-sweet red wine, depending on your taste. I have semi-sweet.
STEP 2
Wash the orange thoroughly, remove a thin layer of zest, being careful not to capture the white part, otherwise the sauce will be bitter. Pour red wine into a saucepan, add sugar, add orange zest, allspice, cloves, cinnamon stick and star anise. Place the wine with spices over medium heat and, stirring occasionally, bring to a boil.
STEP 3
Wash the pears in running water, dry and carefully cut off the thin skin. Be sure to leave the tails and cut off the bottom; this will give the fruit stability and can be easily placed vertically when serving.
STEP 4
Place pears in boiling wine. It should cover the pears almost completely. Cook for 15-20 minutes. The exact cooking time depends on the size of the pears. If the fruits are large, then you need to cook longer so that the fruits are saturated with wine sauce and turn red. Turn the pears periodically during cooking to ensure they color evenly. It is worth remembering that a tablespoon may leave marks on the fruit, so turn over carefully.
STEP 5
Remove the finished pears by the tails from the saucepan and place on a plate.
STEP 6
Simmer the wine sauce for about 20 minutes until it becomes slightly viscous and viscous. Then strain the wine sauce through a strainer. Another option is to remove all the spices from the sauce and only then boil it to the desired consistency.
STEP 7
Gently pour the thickened sauce over the pears and serve.
STEP 8
Pears stewed in red wine can be served immediately while they are warm, or you can wait until they cool. The sauce will become even more viscous as it cools. Bon appetit!
