Pea soup with pork and smoked meats

STEP 1

To prepare delicious pea soup, we prepare the necessary ingredients with spices. For transparency and taste of the broth, put half a head of onion with scales, some chopped carrot slices, cuttings of green onions and dill with parsley into the pan.
STEP 2

Place pork meat on the bone, goose neck and chicken back, weighing six hundred grams in total, into a pan.
STEP 3

Pour the required amount of water into the pan.
STEP 4

Add allspice to taste, cover the pan with a lid and bring the broth to a boil on a high temperature stove.
STEP 5

While the broth is preparing, prepare the croutons and cut the pieces of bread into cubes, then place them on a baking sheet and place them in an oven preheated to one hundred degrees for one hour.

Roughly but not very finely chop one head of onion.
STEP 7

Pour three tablespoons of vegetable oil into a frying pan and add chopped onions.
STEP 8

Grate a fairly large carrot on a coarse grater.
STEP 9

Switch the stove to low temperature and skim the foam from the broth boiling in the pan.
STEP 10

Place the carrots in the pan with the onions and stir with a spatula and fry until the carrots are soft.
STEP 11

Add two cloves of crushed garlic to the pan.
STEP 12

Add half a teaspoon of suneli hops and two bay leaves to the pan.
STEP 13

Stir and simmer the vegetables on low heat until cooked for five minutes.
STEP 14

From the pan with the broth boiling for thirty minutes, remove the onions and herb cuttings that were previously placed in it.
STEP 15

Place two hundred and fifty grams of previously soaked for three hours and well washed peas into a pan.
STEP 16

Cover the pan with a lid and bring the broth to a boil over high heat on the stove.
STEP 17

Reduce the temperature of the stove to low and skim the foam from the boiling broth with peas.
STEP 18

Place three hundred grams of smoked pork ribs into the pan and, covering the pan with a lid, continue cooking the soup for about five minutes.
STEP 19

Place the prepared roasted vegetables into the pan from the frying pan.
STEP 20

Cut two potatoes into arbitrary cubes.
STEP 21

Remove the sliced carrots from the pan.
STEP 22

Place the potatoes in the pan and, closing the lid, let the soup boil on the high temperature of the stove, then add salt to taste, lower the temperature of the stove and bring the dish to full readiness.
STEP 23

Five minutes before readiness, add a mixture of peppers and dried herbs to the pan to taste.
STEP 24

Mix all the ingredients well and cover the pan with a lid and let the soup brew for a while.
