Pasta with seafood in creamy sauce

STEP 1
How to make pasta with seafood in creamy sauce? Prepare the necessary ingredients. You can take several types of seafood separately, or use a ready-made seafood cocktail. I have shrimp and mussels. It is advisable for the cream to be at room temperature. Take pasta from durum wheat, it is less boiled than others.
STEP 2
Thaw frozen seafood in advance at room temperature or in the refrigerator. Seafood should be thawed gradually, without sudden temperature changes, so that it does not lose its taste. Rinse the seafood under cold water and place in a sieve or colander to drain. Dry the seafood well to remove as much excess moisture as possible.
STEP 3
Remove the head and shell from the shrimp. Make a small cut along the top of the shrimp along the body to remove the intestinal vein. If necessary, rinse the shrimp again and dry thoroughly.
STEP 4
The pasta needs to be cooked in plenty of water to prevent it from sticking, so take a saucepan of a suitable size. Cook the pasta in boiling salted water until al dente, that is, slightly undercooked.

Place the pasta in a colander to drain.

You can prepare the seafood sauce along with the pasta. Peel the garlic and cut into slices. Lightly heat the olive oil and butter in a frying pan. Simmer the garlic over moderate heat for 1 minute until the oil becomes fragrant. Remove the garlic from the pan. You can throw it away, we don't need it anymore.
STEP 7
Place seafood in the pan. Fry them over moderate heat, turning occasionally, until golden brown, about 3 minutes. Seafood should not contain excess moisture. Otherwise, they will first be stewed and then fried, which will increase the cooking time. But this cannot be allowed, since the tender meat of seafood delicacies will become rough and tough.

Pour cream into the pan and turn up the heat.
STEP 9
Add aromatic herbs and add a little salt. You can add ground black pepper. Bring the sauce to a boil, reduce heat.
STEP 10
Simmer the sauce over low heat for 5 minutes, stirring occasionally. My shrimp and mussels are large. If you have smaller seafood, it is enough to simmer the sauce for 2-3 minutes.
STEP 11
Grind the cheese on a fine grater. Sprinkle a little cheese to serve.
STEP 12
Add grated cheese to the sauce and stir. Cheese will give the sauce a more viscous consistency and enhance the flavor. When adding salt to the sauce, consider the saltiness of the cheese.
STEP 13
Simmer the sauce over low heat until the cheese melts.
STEP 14
Place the prepared pasta in the pan with the sauce and stir. Warm pasta and sauce for 1 minute and serve immediately.
STEP 15
When serving, sprinkle the remaining cheese and chopped fresh herbs on top of the pasta. Bon appetit!
