Pasta with mussels

Italian pasta a la Napoli with sea creatures. Italians have a magical ability to create masterpieces from simple products. But my modest efforts in preparing this pasta allowed me to mentally return to a warm September evening in a small cozy trattoria on the shores of Sicily.

    Peel the garlic and chop into rings. Wash the chili pepper, remove the stack and remove the seeds.

    First you need to flavor the olive oil. Heat it in a frying pan. And fry the garlic until golden brown.

    Once the garlic is lightly browned, add finely chopped onions to the pan. Fry it for a couple of minutes until soft.

    Then add half! finely chopped chili pepper. Or add the whole pepper if you feel such an irresistible burning desire. Fry the vegetables for another minute.

    Remove the cherry tomatoes from the stacks, wash and dry. Add to the pan.

    Boil water in a saucepan. Add some salt. Place the required portion of spaghetti in the pan vertically and, using a spatula, gradually drown the spaghetti in boiling water. Cook according to package instructions. My pasta was ready within eight minutes of boiling again.

    Pour dry white wine into the pan and add mussels. Simmer the wine over high heat for five to six minutes. There should be some sauce left. Add salt if necessary.

    Drain the spaghetti in a colander. Then place the pasta in a nest shape on plates. Add mussels and tomatoes on top. Drizzle with sauce and garnish with fresh oregano or basil.
