STEP 1

How to make pasta with cheese and tomatoes? Prepare your food. Choose high-quality pasta, made from durum flour - they do not boil into porridge, they are more tasty and healthy. The size and shape can be any. Take large, fleshy tomatoes. Wash all vegetables and herbs well and dry.
STEP 2

Peel the onion and cut it in any way - into cubes, half rings or quarter rings. For this recipe, the cutting method is not important.
STEP 3

Peel the garlic and cut into thin slices.
STEP 4

Remove the skins from the tomatoes. How easy is it to do this? Wash them and make cross cuts on top with a sharp knife. Pour boiling water over for 1-2 minutes. Then transfer to a bowl of cold water. Due to temperature changes, the skin can be removed very easily with a knife.
STEP 5

Cut the peeled tomatoes into large pieces.
STEP 6

Tear off the basil leaves and chop them finely. Instead of basil, you can use parsley, but dill or cilantro will be superfluous.
STEP 7

Heat a thick-bottomed frying pan over medium heat and pour vegetable oil into it for frying. Place onions and garlic in it. Fry them, stirring, for a few minutes until translucent. At the same time, put a pot of water on the fire to cook the pasta.
STEP 8

Add tomatoes, basil and garlic to the onions. Salt, pepper, add spices. Italian herbs work well for this dish.
STEP 9

Fry the vegetables, stirring, for a couple of minutes. At the same time, add pasta to boiling water and add salt. Stir and let the pasta cook for the time indicated on the package.
STEP 10

Cover the pan with the sauce and reduce heat to low. Leave it to simmer like this for 7-10 minutes.
STEP 11

Place the finished pasta in a colander. Real Italian pasta is cooked until al dente (to the tooth) - it should remain slightly undercooked. This pasta is both tastier and healthier. Add the pasta to the pan with the sauce.
STEP 12

Stir gently, cover the pan with a lid and leave to stand on the lowest heat for a couple of minutes.
STEP 13

Then divide the pasta into bowls and serve. Before serving, sprinkle them with finely grated hard cheese. Bon appetit!
