STEP 1
How to make pancakes with red fish and cottage cheese? Prepare ingredients for pancakes. Milk can be of any fat content; it is better if it is at room temperature - in warm liquid the flour will disperse faster and without lumps. Adjust the amount of sugar and salt to your taste. STEP 2
Wash the eggs, dry them and beat them into a bowl. Add sugar, soda and salt to them. Whisk everything together with a hand whisk.
STEP 3
Pour half the milk into the eggs and stir. Add all the sifted flour. Stir it until smooth. The dough will turn out thick, that’s how it should be. Pour the remaining milk into it and stir again. In this simple way you will avoid the appearance of lumps in the pancake batter.
STEP 4
Pour a couple of tablespoons of odorless vegetable oil into the dough. It will help the pancakes not stick to the pan.
STEP 5
At the very end, pour boiling water into the dough in a thin stream and mix quickly. Don't let the liquid consistency scare you - eggs and boiling water will prevent the pancakes from tearing, and the pancakes will turn out thin.
STEP 6
Heat a frying pan over high heat. A separate article will help you with choosing a pan for pancakes, the link is at the end of the recipe. I used a pancake pan. Grease the frying pan with vegetable oil - this will need to be done only before the first pancake, then the oil will work in the dough. Pour some dough into the pan and spread it over the bottom using circular motions.
STEP 7
Fry the pancake until golden brown on one side, then flip to the other. Adjust the heat so that the pancake fries quickly, but does not burn. Remove the finished pancake from the pan. Fry pancakes using all the dough in this way.
STEP 8
Prepare the filling. Any curd cheese will do, as long as it is tasty. Take any red fish - salted, smoked. Either a whole piece or sliced will do. You can change the amount of filling to your liking. Also, if you wish, you can add herbs to the filling to taste: dill, parsley, etc.
STEP 9
Cut the fish into long thin strips.
STEP 10
Spread a thin layer of cheese on the pancake. Place the strips of fish close to the edge.
STEP 11
Roll the pancake into a roll. Stuff the rest of the pancakes as well.
STEP 12
Serve pancakes to the table. You can cut them into pieces. Bon appetit!
